Pumpkin Pie Pudding

If Thanksgiving has left you with a craving for Pumpkin Pie, this is a great alternative! It tastes just like Pumpkin Pie except no crust and no bake!

1. Mix 1 box of vanilla instant pudding (I used Jell-o brand) and a 12oz can of evaporated milk. Let it set in the fridge for about 5 minutes, then mix with a hand mixer in a can of  Libby's pure pumpkin. Sprinkle in a teaspoon of pumpkin pie spice and mix it all together.


2. Place pudding into ramekins and set in fridge until cold, about 10minutes. For extra flavor I added whipped cream and more pumpkin pie spice. Its amazing, tastes just like the pie!

Ingredients: 1 package Vanilla Instant Pudding, 12oz can Evaporated Milk, 1 can Libby's Pure Pumpkin, 1 t Pumpkin Pie Spice.
optional: whipped cream and pumpkin pie spice
