Siena's First Birthday Hello Kitty Cupcake Cake

Hahah, so you made it past the title! :) This is the Birthday "cake" I made for my daughter for her very first birthday! We had a Hello Kitty themed party. Here is how I made this unique looking cake!

1. First you will need 3 eggs. Preheat oven to 350°F.

2. Measure out 1⅓ cups of water.

3. Pour the water in with the eggs, mix, and add 1 tablespoon of vegatable oil. (I add a few extra drops for luck!)

4. Next mix in the "secret" ingredient, which was also Max's secret ingredient in this show! Stir until everything is well mixed!

5. Pour into cupcake trays lined with cupcake wrappers, just a little over half way full. (If you're trying this recipe from Cancun, I found these cupcake wrappers at the Chedraui in Santa Fe. Otherwise they are pretty hard to find!) Place in oven and allow to cook about 15mins. Check on them though because some might cook faster or slower with all the possible variables. (I saved a little extra batter and made pink and purple cupcakes specially for the birthday girl, just by adding a little food coloring).

6. Take the cupcakes out of the oven and allow to cool. You may want to skim some excess cake off the tops so that they all are about the same size and basically flat. I arranged them on a cookie sheet lined with white paper. You'll be serving it on whatever you decorate them on, keep that in mind!

7. Take frosting and smooth over the tops of all the cupcakes. Make sure the cupcakes are really close to one another and to fill the cracks. Let that sit for a while just so its not really gooey. Then decorate!

8. This is how it turned out! I found this Hello Kitty face from this site and just traced it over my monitor, cut it out, then used a knife to etch the outline that I later filled in with black. The S cupcake is what I used to put a candle in. It all turned out really great. People started complaining that the cupcakes were so addicting they were eating more than they should!

Happy Birthday Siena! A first year for you, and a blessed year for us.
