Fajitas

Nothing catches your nose like fajitas frying in the kitchen! I just made these the other day and got a request for more in the same week!



1. First you'll want to marinade these, so make sure you have an hour for that. Cut up your meat into thin strips. I used flank steak the first time and then the second time (which is pictured) I used chuck steak and it wasn't as great, so for sure get a flank steak! In a large bowl you'll want to mix the juice of one lemon, 2 tbsp olive oil, 2 cloves of garlic, ½ tsp of cumin, ½ of a jalapeno (chopped), and a sprinkle of parsley. Mix that up and let it sit an hour.




2. While the meat is marinating, you can chop the veggies up and get that out of the way. I used 1 large red pepper, 1 large green pepper and 1 yellow onion. You can cover with plastic wrap and get other stuff done before you want to start dinner.




3. Throw your veggies on first in a little bit of olive oil and get them cookin! I cook the veggies first because we like them really well done! 




4. Then throw your meat in and let that get nice and browned! The smell of fajita goodness should be wafting into every room of the house by now. Mmm!




5. Wrap in a tortilla, smother in sour cream, pour on some cheese, toss in some beans, sprinkle a little lettuce and devour!

Ingredients: flank steak, 1 large red pepper, 1 large green pepper, 1 yellow onion, juice of one lemon, 2 tbsp olive oil, 2 cloves of garlic, ½ tsp of cumin, ½ of a jalapeno (chopped), and a sprinkle of parsley 
Toppings: shredded cheese, sour cream, beans, hot sauce, tomatoes, etc.
